Меняю тип на "Без аутентификации". Нажимаю кнопку "Применить". Реально squid не перезапускается и тип остаётся прежним. Помогает только 
service squid restart

Увы, обновление до alt21 не помогло: переключение с Kerberos на PAM требует restart (reload не позволяет поменять тип при таком переключении).
с PAM на "Без аутентификации" reload срабатывает, но приходится запускать его вручную (alterator-squid почему-то, судя по логам, этого не делает).
"Без аутентификации" -> Kerberos (reload включает Kerberos+PAM, а restart отрабатывает как надо).

Мораль: при смене типа нужно реально запускать service squid restart.
